Getting ready to get ready for my first attempt at operating a still. I’m just not clear on one aspect of the stripping run procedure.
I understand I want to save the low wines to get enough for a full spirit run. I have a 10 gallon copper Clawhammer still. So if I ferment 10 gallons of wash, I need more wash in order to end up with 8-10 gallons of low wines for the spirit run? After distilling the stripping run to 10-20%, I’m dumping the remainder of liquid in the boiler and re-filling with more wash? Is this correct? If so, looks like I’ll need a bigger mash-tun and fermenter?
