I ordered an 8 gallon copper/stainless pot still from Clawhammer and had it shipped 3 months ago. Upon receiving my still, I cleaned it, washed it and proceeded to distill 24 liters (about 6.5 gallons) of 12% ABV table wine.
Having done the beer stripping run, I then proceeded to do the spirit run. However, the highest ABV of distillate that came out of my still on the spirit run was only 68%.
My still is powered by a 1500 watt electric heating element, also from clawhammer.
According to all the books I’ve read about distilling, shouldn’t the still start producing distillate at around 90% ABV on the spirit run?
