I have a 5 gallon still. After fermentation I have a 90% plus proof for about 2 quarts then it drops to almost nothing. I’m heating wash to about 190-195 degrees, is this too hot? Somebody else said I should test for “Gravity” at the beginning and end. What does this “Gravity” mean?

It is best to take a starting gravity and an ending gravity of the wash. This is a simple test which will tell you how much alcohol is in your starting mash. The starting alcohol content of the wash will determine how much alcohol you can concentrate in the still.
