I’ve been distilling going on 20 hours now. When do I stop? Pot temp (steam is at 185.4) Still getting steady drops in my collection and the proof hydrometer reads 30%. I’ve got a total of eight half pint jars collected. Not including one half pint I tossed for foreshot. So where are my hearts?

The hearts will be somewhere in the middle- there should be a few jars– they will taste smoother and usually a bit sweeter than the heads and tails.
The first jars will be heads
middle jars will be hearts
the last jars will be tails
Let your taste buds decide-How big is your still? 20 hours is a long time!! I usually run 10 gallons in about 8-10 hours depending on how fast I run.
I run my tails between 10-20% and save those and toss them into my still on the next run.
After 20 hours I would stop now as I would want to sleep!

for best shine don’t go much below 50% production. Your end product might be 70+ % but water it down to 50 or 40% once you start producing around 30% your in the tail and it is fine to run it to 0% it will just not taste the best, Wont hurt you if your after the max alcohol content.
