Rum color

      What color should rum be after fermentation and before distilling? I used dark brown pure cane sugar for my first attempt. How long does yeast take to settle?T

      I make 10 gallon mashes:

      Ingredients:
      12.5 pounds raw cane sugar
      9 gallons water
      160 oz. unsulphured molasses

      After fermentation my mash is a brown color- pretty dark- not quite black. Yours might not be as dark as you did not use molasses- but I figure brown cane sugar would add some color. The color is really not that important as long as fermentation finished. It will be clear after distillation.

      I usually let my mash ferment for 8-10 days and then usually another week to settle. I usually have a few going and I’m never in a rush. If you get a pipeline going there is no need to wait 😉
